Sensational Snickers Makeover: Date-Sweetened Bliss!

This recipe presents a delectable treat that not only satiates hunger but also caters to the needs of nursing mothers, athletes, glycemic-conscious individuals, and hormone-balancing seekers. Indulge in this divine creation, a mindful solution for post-exercise refueling and mindful snacking.


This version of the Snickers bars features a nougat layer made with a blend of peanut butter, date syrup, date sugar, and almond flour, a luscious caramel layer using soaked dates and peanut butter, and a rich dark chocolate coating.




Ingredients:


For the nougat layer:


For the caramel layer:

  • 1 cup pitted dates, soaked in warm water for 10 minutes & drained

  • 1/2 cup natural & sugar-free creamy peanut butter

  • 1/4 cup LIVA Foods date syrup

  • 3 tablespoons melted coconut oil.

  • 1/2 teaspoon vanilla extract

  • Pinch of salt

For the chocolate coating:

  • 1 cup dark chocolate, chopped.

  • 1 tablespoon coconut oil


For Garnish:


  • ¼ cup roasted peanuts, roughly chopped (optional)




Instructions:


1. In a mixing bowl, combine creamy peanut butter, date syrup, date sugar, almond flour, vanilla extract, and a pinch of salt. Stir until well combined and the mixture forms a dough-like consistency.


2. Line a rectangular baking dish with parchment paper. Press the nougat mixture evenly into the bottom of the dish. Place it in the freezer for 15-20 minutes to set while you prepare the caramel layer.


3. In a food processor or blender, combine soaked dates, creamy peanut butter, date syrup, melted coconut oil, vanilla extract, and a pinch of salt. Process until smooth and creamy.


4. Remove the baking dish from the freezer and spread the caramel layer evenly on top of the nougat layer. Return to the freezer and let it set for about 1 hour.


5. In a microwave-safe bowl, melt the dark chocolate and coconut oil together in 30-second intervals, stirring between each interval, until smooth and melted.


6. Take the baking dish out of the freezer and cut the layered bars into desired Snickers bar shapes.


7. Dip each bar into the melted chocolate, making sure to coat all sides. Allow excess chocolate to drip off.


8. Place the coated bars on a parchment-lined baking sheet.


9. Repeat the process for all the bars, then place the baking sheet in the refrigerator to allow the chocolate coating to set completely.


10. Once set, your homemade Snickers bars are ready to be enjoyed! Store them in an airtight container in the refrigerator.
