10 Minutes Microwavable Chocolate Zucchini Cake with Date Syrup Chocolate

I could guide you through healthy eating in every post, but why not simplify it with a nourishing recipe? This cake takes just 4 minutes in the microwave, and the chocolate sauce is a breeze at only 1 minute. Thanks to whole food date syrup, melting is unnecessary for this sauce. Combining date syrup, milk, and cacao powder creates the most luscious and delicious chocolate sauce – rich in vitamins, minerals, antioxidants, and that all-important fiber. Your kids won't be able to resist this soft, delectable cake during class or after school.


  • 1 cup all-purpose (never bleached) flour

  • 1/3 cup unsweetened cocoa powder

  • 1/2 cup LIVA date sugar

  • 1/4 cup LIVA date syrup

  • 1 cup milk

  • 1/4 cup vegetable oil

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1 teaspoon vanilla extract

  • A pinch of salt

  • 1 cup grated zucchini (excess moisture squeezed out)

Date Syrup Chocolate Sauce

  • 1/4 cup LIVA date syrup

  • 2 tablespoons milk (or coconut milk)

  • 1/2 tsp vanilla extract

  • pinch of salt


1. In a large microwave-safe bowl, whisk together date syrup, milk, vegetable oil, and vanilla extract until well combined.

2. Stir in the grated zucchini into the wet ingredients.

3. In a separate bowl, sift together the all-purpose flour, unsweetened cocoa powder, baking powder, LIVA date sugar baking soda, and salt.

4. Gradually add the dry ingredients to the wet ingredients, stirring well until you get a

smooth batter.

5. Microwave the batter on high for 3-4 minutes or until the cake is fully cooked. Use a toothpick to check if it comes out clean from the center of the cake.

6. Let the cake cool down before serving.

7. Mix together the chocolate sauce ingredients and pour over the cake. Top with your favorite fruits and enjoy!
